Here’s a Fun Party Twist on a Classic Favorite: Key Lime Pie

Key Lime Pie
Summer is all about summer fruits. What better way to mix it up with a key lime pie made with coconut and banana rum? By using coconut oil in place of butter in your recipes, you add healthy fats and a taste of the tropics, giving it a unique twist. Just be sure, if you want as much of the nutritive qualities as possible in your oil, to get it cold-pressed and unrefined.
Graham Cracker Crust
- Mix crust ingredients in a bowl and then press into the bottom and sides of a pie pan:
- 14 graham crackers
- 4 Tbsp butter, unsalted and melted
- 4 Tbsp coconut oil, melted
- 1 Tbsp sugar
- ½ tsp salt
Key Lime Boozy Filling
- Large egg yolks
- 1 14oz can sweetened condensed milk
- 2 tsp grated lime zest
- ¾ cup fresh lime juice
- Pinch of salt
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 cup Greek yogurt
- 1 Tbsp banana rum (or other rum of your choice)
Place egg yolks and condensed milk in a bowl and beat on medium speed until double in volume, about 5 minutes.
Whisk in lime zest, juice, and salt. Pour into your pie pan and bake in a preheated 350° oven for 15-20 minutes. The filling should puff slightly along the edges and no longer jiggle in the middle. Let cool completely.
Pour a shot of rum, sip, and then move onto the next step for the topping.
In a large bowl, whip the cream and powdered sugar until stiff peaks form. Whisk in rum and yogurt. Dollop onto the cooled pie, calling on your inner artist to create dramatic peaks and valleys with the back of a spoon.
Can’t locate your inner artist? Take another sip of rum. Garnish your masterpiece with the zest from your lime and enjoy!
Best Cocktail of the Summer
Ingredients:
Summer refreshment really can be delivered in a simple 3-ingredient hot toddy gone cold! Even better, you can make this one ahead and simply serve over ice when the party calls for it.
Pour 3 Tbsp of honey in a small jar. Add 2 Tbsp of boiling water and whisk or shake until a thin syrup is formed. Whisk in ½ cup bourbon and the juice of 1 ½ lemons (about 4 Tbsp).
To serve, shake vigorously with ice in a cocktail shaker. Strain into two glasses over ice, then enjoy. Of course, there are also other drinks that pair nicely with this as well!

Both of these devices can be bundled into your security system, so you can receive alerts on your phone, regardless of where you are.
